Severino Trentin has marked the history of the restaurant. Behind his style tied to traditional cuisine, he did not hide his lively spirit which brought him to travel around the world and get in touch with new cooking styles and flavours. Mom’s recipes, Uncle Alfredo’s tales and the flavours of Lapio have been his terroir. While the meeting with Gianfranco Vissani, the trips to Japan, Spain and France have left innovative impressions on his cooking. His secret: to express all his creativity in cooking foods and presenting the dishes, while at the same time not failing to respect the authentic flavours of the ingredients used.


His mission was to find, support and promote local products. Intuition is needed to enter into the product. Severino has captured the flavour, he has shown it off, he has rediscovered it. With an eye to experience he has brought that flavour to each palate and made it memorable. Thus was born an exciting cuisine, light and free in the use of ingredients, and at the same time an ironic, traditional and respectful cuisine. He was a wine amateur, and loved to discover wine producers of his territory and promote them during his journeys. A free spirit in the kitchen, this was Severino Trentin.
